Vandana Shiva (b. 1952) is an Indian scholar and environmental activist. She is an important representative of the alter-globalization movement, which promotes global solidarity and cooperation while rejecting the negative effects of economic globalization.
She has supported numerous grassroots movements in the fields of food and agriculture, promoting biodiversity and sustainable development. She is also a strong proponent of the Ecofeminist movement, arguing for a woman-focused system which engages the female population while also helping the planet.
all the caviar for noodle bar’s caviar and fried chicken meal comes from our friends at regalis. we first started working with regalis and ian purkayastha at ko, and when the noodle bar team started thinking about fried chicken and caviar, we knew we wanted to work with him to source the caviar.
the meal comes with the smoked steelhead trout roe, and guests have the option of choosing either pacific white sturgeon caviar ($500) or golden osetra caviar ($800).

pacific white sturgeon is indigenous to the pacific coast, and regalis sources theirs from two farms in idaho and another in california. large grained and jet black, this caviar is refined and earthy.golden osetra caviar
golden osetra is only 8% of the harvest. usually a black grained caviar, the golden, lightest colored eggs are prized for their buttery notes. regalis sources theirs from bulgaria.
